Pea Shoot Pesto

A great way to use all your pea shoots at once and have it last for a couple of weeks as a spread, dip or sauce!

Ingredients:

-1 10″x20″ Tray or 8 oz of of Mile High Micro Greens Speckled Pea shoots
– 4 to 8 oz Parmesan and/or Favorite Italian Cheeses           – 1/2 LB+ Pine Nuts                                                                                   – 1/2 cup+  of Olive Oil                                                                              – package of Basil

Recipe:

First, Roast your pine nuts in a frying pan no oil needed just a watchful eye.

And Than, using a food processor, add pea shoots and olive oil (Blending Tip: only add handfuls at a time, it all depends on the size of your food processor) and start blending, add pine nuts and cheeses as you move through the pea shoots and add olive oil to keep the moisture content up. A little goes a long way.
